Menu Planning ... is it really worth it?
While I know the answer for me is usually a resounding "YES." Summer days at pools and parks, schedules and days with no schedule at all have meant that lately there have been lots of diversions from the weeks planned meals. I have to admit that we have been eating out more than normal but there also have been nights when a sandwich is just so much easier than cooking a planned meal. So here I sit planning this week's coming meals thinking ... "Should I take a break from menu planning for the Summer? Is it really worth it when it's not being followed through with many nights?"
Right behind that thought crept the age old question of "What's for dinner?" (I really don't like that question.) Right away I decided that yes definitely I want to continue to plan our meals for each week. Yes there will be meals from one week's plan carried over to the next week's plan ... and maybe even the week after that too .... but that's okay. At least there will be a plan in place which ultimately makes many nights easier.
I am going to start having one Sandwich night on the menu each week. We may end up having sandwiches on the planned night or of course rearranging the week's plan. So if you have a favorite summer time sandwich idea/recipe, please share.
Here's what's for dinner this week...
Monday - Lasagna - In the freezer and oven ready
Tuesday - Breakfast for Dinner - Scrambled Eggs, Sausage, Fruit
Wednesday - Smoked Chicken, Corn on the Cob, Roasted Potatoes
Thursday - Chicken Soft Tacos
Friday - BLTs, Veggies & Dip, Pretzels
Saturday - Dinner Out
Sunday - Grilling Out with Friends - Hmmm .... not sure what though
What are you having for dinner this week?

I was going to say "just put the sandwiches on the menu plan" bu thten I saw that's what you did:) I also like to make up a batch of pasta salad when I am already in the kitchen cooking dinner and then save it for a few days later when I will be too busy to cook.
Thanks Tosha! Pasta salad is such the perfect summer time meal!
