Menu Plan Monday October 18th


Does life ever slow down??  Just when I start to feel like we're in a routine more gets added to our schedule.  Just part of life with 3 kids I guess, right? Between play practice for one, karate for 3, soccer practice for 2 and a Mom's Night Out it's gonna be a week of busy evenings here.

We had dinner at a friend's house on Friday night.  They smoked pork ribs .... so good!  Fortunately for us they way overestimated how many ribs we would eat and there were lots leftover.  A whole slab is now in my fridge and will be Monday night's dinner.

It seems like Pumpkin Pancakes have been on my menu plan several times lately.  For various reasons we have yet to have them so they're on the plan again for this week.  Thankfully I have several bags of pumpkin in my freezer.  I hear canned pumpkin is going to be expensive and hard to find this year.

This time of year, soup is going to become a regular thing on my menu plans.  I love soup and will be looking for new recipes.  I was thrilled when I saw that Katie at The Cutting Back Kitchen posted her  Olive Garden copy cat Zuppa Toscana recipe.  I always choose Zuppa Toscana over salad when we go the Olive Garden.  I can't wait to try it on Wednesday. 

Here's what's for dinner this week...

Monday - Smoked Ribs, Sweet Potatoes & Broccoli

Tuesday - Pumpkin Pancakes, Fried Apples & Bacon

Wednesday - Zuppa Toscana & Homemade Bread

Thursday - Mom's Night Out!  Cheddarwurst, Pretzels & Green Beans for my boys.

Friday - Cooking dinner for a friend & her family for her b-day.  It's a big one! Waiting for her dinner requests.

Saturday - Dinner Out

Sunday - Homemade Pizza

your breakfast for dinner night looks great! How do you do the fried apples?

Hey Tosha,
I peel, core and slice the apples. Put them in a skillet with sugar, cinnamon and butter. I don't measure anything so I can't help there. I cook them until they're tender. They're wonderful on top of Pumpkin Pancakes!
