Menu Plan Monday


We have a crazy busy week coming up!  Do the last few school weeks before Summer break get busy for you too?  I'll be in my middle son's classroom twice this week ... once is to help 25 third graders Tie Dye.  Wish me luck and patience please.  Thursday night I'm taking my youngest to a kindergarten open house.  My baby is going to school next year.  My oldest is working on a rather extensive (extensive for a 5th grader that is) research project.  I've worked hard at taking a hands off approach with this assignment and I'm proud of the time he has put into it.

Anyway I know none of that has much to do with our busy week except that this week's meal plan includes meals that will take very little time to prepare.  I'm looking forward to trying the Spicy Southwest Marinade on Pork Chops this week.  It's new to me.  I really enjoyed putting all the fresh ingredients in the blender during my freezer cooking day last week.  I'll let you know what we think ....

Here's what we're having for dinner this week .... 

Monday - Waffles, Scrambled Eggs
Tuesday - Chuck Roast, Carrots, Potatoes
Wednesday - Spicy Southwest Marinaded Pork Chops, Broccoli, Spanish Rice with Bacon
Thursday - Hamburgers, Pretzels, Carrots & Dip
Friday - Dinner Out
Saturday - Rice a Roni with Ground Beef & Corn
Sunday - Homemade Pizza

Good luck with the kids tie dyeing-I'll be washing and drying all of those shirts later this week! :) (I guess everyone else volunteered to bring in the dye and rubber bands.) Hee.

My "middle-ish" boy is going to transition next year-so we might just have two in the same class again when it comes time for 1st grade!
