Menu Plan Monday

I'm a little early.  It's not Monday yet.  Since I am starting the first week of my two week Eat from the Pantry Challenge I had my Menu Plan complete early.  My stockpile is overflowing so coming up with meals for this week wasn't really a challenge at all. In fact I already have next week's menu plan finished too.  Here's what's for dinner this week....
  • Monday - Slow Cooker Chicken & Dumplings  I add carrots too.
  • Tuesday - Mexican Shredded Chicken  --- Tacos or Nachos
  • Wednesday -Spaghetti & Meatballs (Remember my Time Saving Cooking?)
  • Thursday - Leftovers --- Part of my Eating from the Pantry Challenge is to not throw away any leftovers
  • Friday -BBQ Chicken Pizza
  • Saturday - Beef Vegetable Soup
  • Sunday - Breakfast for Dinner -- Pancakes, Sausage & Scrambled Eggs

Tonight we're having leftover pork, I'm going to make pulled pork from it.
Tomorrow night, leftover turkey and all the fixin's which we had last night (got the 11 pound turkey for $4 at Thanksgiving time)
Wednesday night, frozen chicken nuggets and apple slices for boys, whatever turkey is left for me and Bruce
Thursday, spaghetti and meatsauce (sauce was 93 cents! have ground beef in freezer) green beans
That's as far as I've gotten....

It's great that you're so good about stretching leftovers so far! I've got to get better about that. Too much goes to waste lost in the back of my fridge!
