Menu Plan Monday



I had so much fun with my Time Saving Cooking night!  The downfall is that now I don't want to use those meals because I really like the idea of having them in the freezer.  Oh such problems!   I'm going to try to use only one or two per week.  That should get me through at least 5 or 6 weeks of at least one easy dinner per week before I start over again.

Are you doing weekly....maybe monthly....meal plans?  I'd love to hear about how it's working for you.  Is it something new for you? Or something that's part of your routine?  I'm always looking for new recipes.  What are some of your family's favorites?  I'll add them to my Menu Plan Monday's and post the recipes. 

By the way that reminds me....I have a friend (a frugal budget minded friend) who is looking for chicken recipes.  The catch:  She doesn't like chicken but "In effort to work on the budget" (in her words) she's looking for chicken recipes that don't taste like chicken.  Make sense?  I'm not so sure ... but hey I like chicken.  Send me any ideas and I'll forward them on! Thanks!!

Here's what's for dinner this week....
  • Monday - Meatball Soup I'm looking forward to trying this for the first time.  I'll let you know what I think! I'm using the Mini Meatballs from my Time Saving Cooking and the reduced spinach and mushrooms I bought at Jungle Jim's last week.
  • Tuesday - Mac & Cheese with Veggie for the Boys....Steak & Baked Potato Date Dinner for my husband & I after kids go to bed
  • Wednesday - Open Faced Shredded Pork Sandwiches on Homemade Bread & Green Beans
  • Thursday - Coq au Vin alla Italiana with Mashed Potatoes
  • Friday - Homemade Pizza
  • Saturday - Eating Out....I think we'll go to Texas Roadhouse where we have a credit for 2 steak dinners after a not so good experience last time.  We also have 2 FREE Kids Meal coupons so it should be a very inexpensive dinner out!
  • Sunday - Corn Sausage Chowder  A family favorite and so easy!

    meatball soup sounds great my family loves meatballs soup they are not a big fan of but maybe this one

    I really like the idea of date night at home after the kids go to bed. My hubby and I haven't had as many date nights lately as I would like and this would be a great way to get that back into our schedule. Thanks for sharing your menu.
